Meet Noelle Pabst! Lauren is a Health at Every Size aligned dietitian who is passionate about helping her clients achieve food freedom. 

Where are you from and do you have a favorite thing about that place?

I am from right here in Maryland! My favorite thing about Maryland is the diverse landscape with its (small) mountains, lakes and ocean access! I have a particular soft spot for my home in Baltimore City,
and particularly the views of the harbor. Mr. TrashWheel keeps it beautiful and its quite serene to walk along!

What was your favorite food as a child and what is your favorite food now?

My go-to response since childhood for my favorite food has always been tacos or Cheez-its. If I re-visit that question as an adult, I think I’d have to say ice cream.

Are you a coffee or tea person?

I am drinking tea while writing this, but I am not myself without my morning cup of coffee, so I’d have to say both! Big fan of the Chobani flavored creamer.

Do you like to cook? What are your go-to meals?

I love to cook! My go-to meals are taco bowls, pasta bowls, crock-pot meals and soups! I also love a good smoothie.

Do you have any hobbies outside of work?

Outside of work, I enjoy spending time with friends and family and seeing the great outdoors. I recently went skydiving and have plans to go again in a few months!

What is the last book you read?

The last book I read was Yours Truly by Abby Jimenez, but I am currently working on Sick Enough by Jennifer Gaudiani.

Where is your favorite travel destination? Any future trips coming up?

My favorite travel destination is Cape Hatteras, NC. The most beautiful travel spot I’ve been to was Koh Samui in Thailand. I have an upcoming trip to Rocky Mountain National Park this summer!

How did you become interested in nutrition?

I became interested in nutrition very early on in high school, when I realized I was not fueling enough to perform well in sports. I entered undergraduate as animal science on the pre-veterinarian track and it required one lab for me to realize it was NOT for me. Dietetics was also in the Agricultural College at my university, so the switch was fairly simple! I haven’t looked back since.

So far, what’s your favorite part about Courage to Nourish?

My favorite part of Courage to Nourish so far is the HAES framework that everyone shares. I really like that although each dietitian brings something unique to the table, we all share the same values. It greatly improves client care!

What is something that you wish you knew about nutrition when you were younger? Or what issomething that you want people to know about nutrition?
I want people to know that nutrition does not need to be perfect. Every single change an individual makes to improve their relationship with food is important!
